Classic Lentil Soup: -
Ingredients:-
1 cup green lentils.
2 cups vegetable broth
1 onion, diced
2 cloves of garlic, minced
1 carrot, diced
1 celery stalk, diced.
1 teaspoon ground cumin
1 teaspoon dried thyme
Salt and pepper to taste.
2 cups of water
Instructions:-
Rinse the lentils in a colander and set aside.
In a large pot, sauté the onions and garlic until softened.
Add the diced carrots and celery and cook for a few minutes.
Add the cumin, thyme, salt and pepper, and stir to combine.
Add the lentils, vegetable broth, and water. Bring to a boil and then reduce the heat to low.
Simmer for about 20 minutes or until the lentils are tender.
Serve the soup with a sprinkle of chopped parsley on top.
Spicy Lentil Soup:-
Ingredients:-
1 cup red lentils
2 cups vegetable broth
1 onion, diced.

1 jalapeno pepper, seeded and diced
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon smoked paprika
Salt and pepper to taste
2 cups of water
1 cup of diced tomatoes
Instructions: -
Rinse the lentils in a colander and set aside.
In a large pot, sauté the onions and garlic until softened.
Add the jalapeno pepper, cumin, coriander, smoked paprika, salt and pepper, and stir to combine.
Add the lentils, vegetable broth, water, and diced tomatoes. Bring to a boil and then reduce the heat to low.
Simmer for about 20 minutes or until the lentils are tender.
Serve the soup with a sprinkle of chopped cilantro on top.
2) Vegan Tofu Stir-Fry:- This is a quick and easy meal that can be made with a variety of vegetables and sauces. Simply press and slice the tofu, then stir-fry it with vegetables like bell peppers, broccoli, and onion. To make Vegan Tofu Stir-Fry, you will need:
1 block of firm tofu
1 bell pepper (any color), sliced.
1 head of broccoli, cut into florets.
1 onion, sliced.
2 tablespoons of oil (canola or vegetable)
2 tablespoons of soy sauce
1 tablespoon of rice vinegar
1 teaspoon of sesame oil
Rice or noodles, for serving.
Instructions:
Start by pressing the tofu to remove excess moisture.
Place the tofu block on a plate lined with paper towels and press down with another plate on top or use a tofu press.
Leave it for at least 15 minutes. teriyaki
Once the tofu is pressed, slice it into cubes or rectangles.
Heat the oil in a large pan or wok over medium-high heat.
Add the tofu and stir-fry for 3-4 minutes, until it starts to turn golden brown.
Add the sliced bell pepper, broccoli, and onion to the pan and continue to stir-fry for another 5-7 minutes, or until the vegetables are slightly tender but still crisp.
In a small bowl, mix together the soy sauce, rice vinegar, and sesame oil to make the sauce.
Pour the sauce over the stir-fry and toss everything together until the tofu and vegetables are evenly coated.
Serve the stir-fry over rice or noodles and enjoy!
